Mix your breadcrumbs in a bowl with lemon zest and smoked sea salt and black pepper. Prepare your cod fillets by coating in flour and then dipping in beaten egg. Next coat in the panko breadcrumbs. Leave to one side whilst you make an apple sauce. For the apple sauce, peel and chop and place into a saucepan. Simmer for 20 mins in the cider vinegar until the apple softens. Sprinkle over some sugar and remove from the heat, allow to cool. Place the coated fish with the breadcrumbs and spray with oil all over. Place onto gresae proof paper or air fryer liner. Cook at 180 for 15-20 minutes checking after 10 minutes, maybe turn over and keep an eye on util crispy and golden all over, Toast your bread roll and spread the base with some mayonaisse. Place on some lettuce. Add your crispy cod fillet and a generous spoonful of apple sauce. Serve with 2 granary baps and fries or salad
