Avocado & Salsa Verde

Ripe avocado and salsa verde are a match made in culinary heaven, combining creamy richness with vibrant, zesty flavors. Perfect as a topping for tacos. Here we have topped our beautiful salmon. Yum! Another way to enjoy this delightful pairing is as a dip or spread. Blend ripe avocado with salsa verde to create a creamy, tangy dip perfect for tortilla chips, fresh veggies, or even as a sandwich spread. Its versatility makes it an incredible addition to any appetizer platter or a quick, healthy snack option.

  • In a small mixing bowl combine salsa verde, coriander, red onion, and avocados.
  • Mix together and set aside.
  • Preheat a large cast-iron skillet over medium-high heat.
  • Meanwhile, pat salmon dry and season with salt and pepper.
  • Add oil to skillet; when oil is hot but not smoking add salmon skin-side down.
  • Cook salmon 4 to 5 minutes per side. 
  • Serve salmon with a large spoonful of avocado salsa verde and a squeeze of lime.
  • To serves 2 you'll want side dishes.
