Flamiing Swordfish Salmoriglio

🗡️ Grilled Swordfish with Zesty Salmoriglio

This isn't just a fish dish; it's a classic Mediterranean experience. The star is the magnificent swordfish, celebrated for its steak-like, firm texture and clean, delicate flavour. Grilled to perfection, its naturally rich, meaty character forms the perfect nuance foundation for the vibrant sauce that defines this meal.

Ingredients (Serves 2 with sides)

  • 2 Swordfish Steaks
  • 2 lemons (zest and juice separated)
  • 3 garlic cloves (minced)
  • ½ cup olive oil 
  • 1 tsp oregano
  • Sea Salt & ground black pepper to taste
  • 2 tbsp parsley (chopped)
  • 2 tsp butter

Instructions

  • Mix the lemon zest, olive oil, garlic, oregano, salt and pepper in a bowl. Half the liquid into a separate bowl and add the Swordfish. Marinade for 1 hour. Add parsley and lemon and mix well.
  • Hour hour into marinating light the BBQ has come up to cooking heat, place the Swordfish on the grill. Cook for 4 minutes then flip and cook for a further 4 minutes. You can rotate again 90degrees to obtain a crosshatch patter on your Swordfish. 
  • When your Swordfish has cooked, rest for a couple of minutes. Top each steak with a tsp of butter to each and spread it around and then pour over the dressing. Best served over an Orange Salad.
