Ingredients (4 servings)

  • 3 large potatoes (cubed)
  • 3 spring onions
  • 1 whole cucumber (skinned)
  • 3 tbsps mayonaise
  • 1 tbsp butter
  • 1 tbsp horseradish
  • salt & pepper to taste

Instructions

  • Peel and cube your potatoes. Put into a large saucepan and boil for 10 minutes
  • Drain and add your butter. Add your mayonaise and horseradish.
  • Season and with scissors finely cut your spring onions including the green part.
  • Skin your cucumber and slice into tiny cubes.
  • Mix all together and keep covered in a bowl in the fridge util ready to use.
