Ingredients (4 servings)
- 3 large potatoes (cubed)
- 3 spring onions
- 1 whole cucumber (skinned)
- 3 tbsps mayonaise
- 1 tbsp butter
- 1 tbsp horseradish
- salt & pepper to taste
Instructions
- Peel and cube your potatoes. Put into a large saucepan and boil for 10 minutes
- Drain and add your butter. Add your mayonaise and horseradish.
- Season and with scissors finely cut your spring onions including the green part.
- Skin your cucumber and slice into tiny cubes.
- Mix all together and keep covered in a bowl in the fridge util ready to use.
