Whenever we make this dish it seriously does make us happy. We're not sure if it's garlic in this recipe, some of the curry additions - who knows?.
All we know is we make this, freeze this and keep this to add to many of our amazing fish dishes. We usually srpinkle this into a non stick pan but naughtilly, add some extra butter and stir fry until slightly crusty. Really rice-a licious!
Ingredients (4 servings)
- 200g Extra Long Pilau Rice
- Powders 1 tbsp garam masala, curry power (medium) & tandoori masala
- Butter
- 1 onion & 2 cloves garlic chopped
- 1 bay leaf
- 6 cardamom pods
- chopped tomato (half tin)
- salt & pepper to season
- fresh coriander
Instructions
- Boil a pan of water and add 200ml of pilau rice, add the bay leaf and cardamom pods, bring to the boil and then turn off the heat - cover with alid and leave for 20 minutes.
- In a separate saucepan add finely chopped onion and garlic and gently cook in butter for approximately 10 minutes.
- Add half a can of chopped tomatoes and your spices. Season with salt & pepper
- Chop some fresh coriander and mix through.
- Add the rice to the onion mix and mix all together
- At this point we usually add to a large zip locked bag ready to freeze until needed.
- When needed warm through some butter and stir fry until slightly crispy
