This super quick soup is beneficial due to its high levels of antioxidants, anti-inflammatory properties, and nutrients like dietary fibre and folate. It can help lower blood pressure, improve digestive health, and support heart health. Not to mention mixing with celery this has a deep earthy and aniseed taste and is low in fat.
Ingredients (Serves 2)
- 1 Beetroot Pack (we prefer pickled but can use natural)
- 1 pack of celery - use half
- 1 Vegetable Oxo Cube
- 1 pack Feta cheese to crumble on top
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- Must have a hand blender or smoothie maker to blitz the mixture.
Instructions
- Add your beetroot and juice to a smoothie maker with roughly chopped celery and blitz.
- Add extra water to thin if required.
- If using a hand blender add all the ingredients to a sauce pan and submerge the hand blender top.
- Tilt the pan to the side side the mix is higher and pulse until smooth.
- Add the vegetagle oxo and heat and for for 3 minutes.
- Season with salt and pepper
- Crumle over some feta cheese to finish.
