Ingredients
- 1 tbsp vegetable oil
- 4 tbsp butter
- 200 grams spinach
- Burford Brown eggs
- 1 or 2 English Muffins
- 4 tbsp Hollandaise sauce
- Salt and freshly ground black pepper to taste
Instructions
- Begin by adding the vegetable oil in a frying pan over a medium high heat.
- Add 2 tablespoon of butter to a pan along with the spinach. Cook for 5 minutes, stirring occasionally or until the spinach is just wilted and buttery. Season lightly with salt and pepper.
- Boil half a small pan with water and drop in as many eggs as required and poach for about 5 minutes
- While the spinach cooks, cut each English muffin in half and toast until golden brown.
- Spread with the remaining butter and then begin to assemble by adding some of the spinach to each muffin half,
- Warm some hollandaise sauce to spoon over the spinach and finally top with your eggs.
- Season to taste
- Serve while still hot.
